The Weekend

This week has been quite a busy one and very eventful.  At the beginning of the week, Michael and I were preparing for a ballroom competition that was this weekend.  I started getting terrible tooth aches which were causing me to get sick and cause a lot of pain.  Mike being the smart guy that he is, suggested that I really get it checked out. start out my week I found out that I was going to be going to an Oral Surgeon on Friday as well as getting all 4 wisdom teeth pulled. What a great start.

For the next few days, I had some antibiotics to help relieve the pain until Friday morning rolled around.  I was so bummed because I wanted to compete so badly over the weekend but was ready to be out of pain and to get the infection out.

My mom is amazing and she took care of me during the whole process.  At 6:30am Friday morning, it was time to get ready and head out to the doctor.  I am the kind of person who is a complete chicken of surgery, needles, blood etc.  And walking into the doctors made me nervous.  The nurse walked me back into the room where the procedure would be performed and all I saw were these cords/wires and monitors everywhere and now I was feeling sick.  I sit in the chair and the Surgeon walks in and is extremely friendly.  He explains to my mom and I what is going to happen exactly and what "risks" may possibly occur.  He leaves the room and it's just my mom, myself, and another girl getting me ready.  She connects me to about 3 wires and then lays me back.

I got "Laughing Gas" put on and I love how it makes you feel so relaxed...I started to get really drowsy and then I feel her wiping down my arm and I say, "That isn't a needle is it?" and she reply's  "Yes, it is." Ugh...I hate needles.  I should have realized that going under Anesthesia that of course I would need an I.V.  Well, the worst part was they couldn't find my vein and continued to poke 3 times until they found it.  I have a lovely bruise to show for it.   Well they got the I.V. in and then they started putting things in my mouth and off to sleep I went.  I woke up and don't remember a whole lot after that.  My mom said that I wouldn't stop talking but thankfully I didn't say anything ridiculous :) Anyway, we get to our house and my sister Ariel and my mom help me get inside and in bed.   For the next few days, I would continue to look like this.  

Lovely isn't it? Got a lot of movie time in and I haven't slept so much in my entire life.

Saturday morning rolls around and my mom was going to get my dad from the airport, I was sick of being in bed and wanted to come.  I was pretty perky that morning and felt great! I went with her and then on the way back home from the airport, was completely asleep.  I've been in and out all day, everyday.  We go to get my prescriptions filled and then I got to go have a fitting for my new Latin dress :)

After sleeping all afternoon from exhaustion, Mike picked me up that night to get me out of the house for a little bit, I was a complete zombie...felt bad for the guy.  Anyway he brought me flowers, a card, and nutella (which I love!) and we went to his house and did some pumpkin art.  Here is what we came up with.

Yes, we even rhinestoned a pumpkin.  We are definitely ballroom dancers.

After awhile my body was fading one again and I really needed to get back home and climb in bed.  But when we got to my house, we needed some hot chocolate.

The hot chocolate was so good! Shortly after I went right to sleep.  Great way to end the night.

It is Sunday and today I have been more exhausted then the last few days.  My mom made Sunday dinner and made it so everything was extremely soft (since chewing isn't in the picture just yet)  and it tasted so good! It was to most food I have had in the last 3 days combined.  But looking forward to seeing how I will feel tomorrow jumping straight back into school, going to work, and slowly going back to dancing.

Chef in the Making - Chicken Tetrazzini

I'm really starting to enjoy cooking.  Tonight, I wanted to do dinner once again.  My little sister Britt'e picked out the meal and off to work I went! (The recipe is from the Lion House Cookbook).

Chicken Tetrazzini

8 ounces spaghetti, broken in pieces and cooked
5 T. butter
6 T. flour
3 c. chicken or turkey broth
1 cup light cream
1 t. salt/pepper
5 T. minced green peppers
3 c. cooked chicken, cubed
1/2 c. grated Parmesan cheese
1/2 c. shredded cheddar cheese

Melt butter in skillet, blend in flour. Stir broth into flour mixture. Add cream. Cook until mixture thickens and bubbles. Add salt and pepper, drained spaghetti, mushrooms, green peppers, and cooked turkey. Turn into individual baking dishes or a 2-3 quart baking dish. Sprinkle with cheeses. Bake at 350 degrees for about 30 minutes or until bubbly and lightly browned. Serves 8. 

Along with the meal, I made some broiled Garlick Bread.  It tastes just like Brick Oven's!

We didn't have any Chicken Broth in our house so I used a substitute of 3 cups of water boiled and added 3 cubes of  Chicken Bouillion.           

Sprinkled on top of the french bread, so good!

This meal has always been a favorite in our house! Highly recommend.

Such is my life

College is stressful, period.

Today, my wonderful boss was kind enough to let me get the day off to study for my math exam.  I needed it so badly and I am glad I took the whole morning and afternoon to study.  Michael and a lovely girl named Audrey covered my shift today willingly.  Love them both!!

For the first time this semester I got to wear sweats and have messy hair for an entire day.  That NEVER happens.

At this point in the semester, I (like many other students) have a hard time being motivated since it is in the very middle of the semester.  My family is very encouraging though with school and extremely helpful in cheering me on the continue to try my best.  

Another bonus about having the day off to study is I got to be at home in the middle of the day also for the first time this semester since team runs so late every night.  Since I am never home, I am hardly every driving, Mike drives me home from team every night and every where else we go, so...being in a car driving feels weird to me, but today, I got to take my little sissies to the orthodontist to get their braces tightened.  Even just being on a short drive with them, singing in the car was what I miss!! 

When my lovely mom dropped me off at school for me to study more and practice with Mike before team, I really have a hard time getting out of the car because I just want to go home with her.  I took for granted seeing her all of the time in the past as well as the summer and now, I wish I got to see my parents and my siblings that much more.  

But it is almost the end of October which means there is only about a month and a half left of the semester which means that hopefully I can make Spring Semester more workable to be around my family and to coordinate better with school and such. 

Hug and kiss your family too much. Lesson learned.

Chef in the Making - Monterey Chicken

Sunday dinner at my house is always the greatest! Tonight, I was privileged to cook the main course.  A recipe that Pinterest so Kindly provided. I am proud of this if I do say so myself. 

On the menu tonight was:

Monterey Chicken:

 4 boneless, skinless chicken breasts
1/4 c. bar-b-que sauce ( I use Bull's Eye)
1/4 c. real bacon bits
1 c. colby and jack cheese, shredded
1 14 oz. can Rotel tomatoes (Or Diced)
sliced green onions

Preheat oven to 400 degrees. Pound out chicken breasts to flatten. Season with pepper. Grill chicken until no long pink (we used our George Foreman grill) and place on baking sheet covered with foil. Top each chicken breast with one tablespoon bar-b-que sauce, 1/4 c. cheese, 1/4 c. tomatoes, green onions and one tablespoon of bacon bits. Place in oven and bake until cheese is melted (about 5 minutes).

Tis the Season

One of the reasons I love fall so much is because that is when all of the decorating happens and I love it! My mom has a very special way of making things look phenomenal! This morning it was my little sisters and myself with mom and we went and got some grocery shopping, and I mentioned that I wanted us to start decorating for fall, and we did exactly that. 

5 minutes from our house is a Market and we went in seek of great pumpkins.

 We had a bit of digging to do for the idea that my mom wanted to create.  We found 4 perfect pumpkins and headed to Hobby Lobby to get the remainder of the things we needed. 

All I can say is, our craft for the day is amazing! Looks great on the porch :) Now, we need a fall wreath.

Tonight, Mike and I went out with a few other couples for a date night that was absolutely fabulous! We wanted to go to Hee Haw's which is "cheaper".  We went and explored the area before we went into the Haunted Hay Ride..

We were having an absolute blast! Laura and I are a wee-bit afraid of scary things but off to the Haunted area we went! It was funny because we didn't really get scared, at all, just more of us laughing at the people that were trying to scare us, we were laughing at them, but it was a blast and we made it out without wetting our pants :)

 Here is a "Did you know" Fact of the day.

We went back to Keenan's house, and chit-chatted while he and Laura made brownies for us.  Then we started a movie "Harry Potter 7 Part Two".  Such a good movie but midnight came all too quickly.  Utah Valley is definitely starting feel like fall more and more.  The weather is getting cooler every single day.  I am loving every moment!
